Kale and White Bean Soup

Kale has many health benefits.  It's full of antioxidants   It has anti- inflammatory properties. It provides healthy doses of Vitamins A, K and C.  Because of it's high fiber content, it can help lower your cholesterol.

To celebrate that- here's a quick and easy recipe that my kids love.

Saute until tender:
2 Tbsp butter
1 small onion, chopped
3 cloves garlic, minced
1 stalk celery, chopped
2 carrots, diced
salt and pepper to taste 

Add:
1 can white beans, drained and rinsed
1/2 cup orzo pasta
1 bunch kale, washed and chopped
1 Tbsp fresh rosemary, chopped
crushed red pepper flakes to taste
1 cup water
3 cups chicken stock

Bring to a boil.  Reduce heat and simmer until pasta is tender.

Stir in:
juice from 1/2 a lemon

Top with:
Parmesan cheese 
a drizzle of olive oil

Serve with your favorite crusty French bread.

This is a great soup for cold winter days and gets thicker as it sits.
